What is gluten free pasta made of?

A question commonly asked is what type of pasta is gluten free?

There are many types of wheat free pasta , that is pasta that do not have gluten in them.

You can easily find them in supermarkets or specialist gluten free stores.

There are different choices to pick a pasta type that you think you may enjoy the taste better than the others.

Some of the popular pasta without gluten are:

  • Brown rice pasta
  • Quinoa pasta
  • Red lentil Pasta
  • Rice and quinoa pasta
  • Multigrain pasta made with a mix of different types of grains such  as millet, corn,rice, amaranth.

For this dish I used quinoa pasta. One could hardly tell the difference because the spaghetti was drenched well in the gluten free spaghetti sauce made with Italian seasoning.

How to make this gluten free dinner vegan ?

I used milk and cream to make the creamy sauce.

For a vegan option of this recipe simply substitute the ingredients with the following:

  • Use non-dairy milk such as almond milk, coconut milk, hemp milk for creaminess
  • Use nutritional yeast, soya based cheese for cheesiness.

Ingredients for gluten free pasta sauce

This dish is so simple and so easy to make that you can whip up the sauce while the pasta is boiling in just 20 minutes.

I added broccoli to spaghetti to make the dish nutritious and wholesome. You can choose to omit using broccoli or use any other vegetable of your choice.

All you need are 7 ingredients that you may already have in the drawer.

These are:

  1. Spaghetti ( gluten free or normal)
  2. Garlic
  3. Milk
  4. Italian Seasoning ( for extra flavour)
  5. Butter /Olive oil
  6. Lemon juice
  7. Broccoli

I reduced my cooking time further by adding the broccoli midway with the boiling pasta.

Saved an extra pot to wash too!! 🙂

Cooking tips for making spaghetti in garlic sauce

  1. Follow the cooking instructions of the type of spaghetti pasta you choose . They take different times to cook so make sure you check for the doneness .
  2. Keep the pasta and broccoli al-dente. It tastes better when it has a bite.
  3. As I tried to make a low fat pasta sauce, I used milk instead of cream. To make the cream a bit thick add a teaspoon of flour to the sauce, you can also use cream or half and half is you wish.
  4. Remember to reduce heat to low when you add milk and stir it continuously while adding to prevent curdling.
  5. Remove the garlic sauce from heat when you add lemon juice. If you add lemon juice to boiling sauce there may be chances of the sauce to split.
  6. You can also add lemon rind to the garlic lemon sauce for added freshness.
  7. Use any type of Italian seasoning that you may have. You can omit adding it too if you wish.
  8. If you wish to add a hint of heat add chilli flakes before serving.

Step-wise method recipe to make low carb pasta in garlic cream sauce

Below is the step wise guide with images to make this spaghetti recipe at home.

STEP 1

Add 2 tsp or more salt in water and bring to boil. Once it comes to a boil add the gluten free or any type of spaghetti.

STEP 2 

After the spaghetti is cooked midway add broccoli and boil them together. Both need to be al dente and try not to overcook them. Drain and keep aside.

STEP 3 

While the pasta is boiling make the sauce. Heat oil/butter or both and let it melt. Add chopped garlic and saute for a minute until slightly cooked.

Now reduce heat and add in milk mixing well. Next add the Italian seasoning and mix in well and bring back to simmer.

Remove sauce from heat and add lemon juice, stir in well.

Finally add the boiled spaghetti and broccoli to the garlic pasta sauce and stir in well to cover with the sauce.

STEP 7 

Your gluten free spaghetti in creamy garlic lemon sauce is ready to be served. Add chilli flakes and Parmesan cheese if you wish!

Spaghetti ( gluten free or normal) - 250 gms
Broccoli, cut into florets - 1 cup
Garlic, finely chopped - 4 pods
Milk - 2 cups
Italian Seasoning ( for extra flavour) - 1 tsp
Butter /Olive oil - 2 tsp
Lemon juice - 3 tsp

In a deep bottomed add enough water to boil the spaghetti. Add 2 tsp or more salt to water and bring to boil. Once the water comes to a boil add the gluten free or any type of spaghetti.

When the spaghetti is cooked midway add the broccoli and boil them together. Both need to be al dente and try not to overcook them. Drain and keep aside.

While the pasta is boiling make the sauce. Heat pan and add 2 tsp of oil or 1 tsp oil and 1 tsp butter let it melt.

Add chopped garlic and saute for a minute until slightly cooked.

Now reduce heat to low and slowly add in milk stirring in with the garlic.

Next add 1 tsp of Italian seasoning and mix in well and bring back to simmer

Now remove the sauce from heat and add lemon juice, stir in well.

Finally add the boiled spaghetti and broccoli to the garlic pasta sauce and stir in well to cover with the sauce.

Serve gluten free spaghetti in creamy garlic lemon sauce hot with chili flakes for heat and grated Parmesan cheese !
