Reuse left over chicken and disguise them in a new avatar as Indian style spicy chicken patty that is guaranteed to go down as a treat for all! 

The end of festivities is followed by bowls and Tupperware of  gastronomical bomb laying dormant in your fridge.

It could be in the form of mushy legumes, wilted veges or some disintegrated meat pieces.

You cant throw them, coz it is food,  or there is not enough to make a meal and you know serving  again may lead to a mealtime meltdown or you just want a change !!

Getting creative with leftover food resolves most of the above issue.

This spicy chicken patties is similar to a chicken envelop where all your leftovers are very cleverly hidden in a blanket of pastry dough!!

No will will know the hidden edible treasures inside. 🙂

Ingredients For Spicy Chicken Patty Recipe

As this recipe is aimed to reuse the leftovers, you can get creative with most leftover bits in your fridge that you know no one will eat again.

For this envelop style chicken patty recipe I have used:

1 cup of leftover chicken pieces, cut into cubes

2 boiled and mashed potatoes

1 finely chopped onion

1 roll of ready-made pastry dough

Salt and pepper to taste

2 tbsp Hot sauce or ketchup

2 tbsp oil for sauteing and brushing

SPICES USED 

2 tsp roasted cumin powder or 2 tsp curry powder ( you can make your own by following this homemade curry powder recipe )

Step-wise Method For Making Spicy Chicken Patty With Images

Here is how to make the chicken envelope style chicken patty

STEP 1  – Prepare the filling with left overs 

Chop leftover chicken or meat into small pieces and set aside

STEP 2 

Boil and roughly mash potatoes or used leftover potatoes if you have any.

STEP 3 

Heat oil in a pan and saute chopped onions until translucent.

Saute onions till translucent

STEP 4 

Add the chopped meat pieces and mashed potatoes and mix well.

Add leftover meat

STEP 5 

Add salt, 2 tsp of curry powder or roasted ground cumin powder, 1 tsp chili powder and mix. Add hot sauce or tomato sauce to the mixture if you wish.

Add the spices to boiled mashed potatoes

STEP 6 – Roll out the dough 

Roll the ready-made pastry dough into 4 large oval shapes. You can use the ready rolled dough as well and cut into into 4 large squares.

STEP 7 

Take a 2 tablespoon portion of the spicy filling and place it on the bottom end of the oval pastry dough. Fold over the top part and cover the filling. Apply a bit of water or flour slurry  on the sides.Press the sides together with a fork to seal firmly together.

Fill the dough with spicy filling

STEP 8 – Baking the Patties 

Preheat oven to 180 degree Celsius for 5 minutes.

Brush some oil on top of each patty and bake  the patties for 15-20 minutes until it becomes golden brown in colour.

Cooking Tips To Help Make This Recipe

  1. You can use any leftover dish that is dry for making envelope style bakes.

  2. Make sure the filling is cold before you fill in to prevent the dough from becoming too soggy.

  3. Add grated cheese for a cheesy filling. 

  4. Make sure that the sides are sealed well to prevent it from opening 

  5. This dish also makes a good finger food lunch box meal. 

  6. Use smaller pieces of dough to make mini sized patties for a quick repurposed chicken patty appetizer. 

Substitutes and Alternatives Ingredients 

  1. Substitute meat with any dry veg leftover you have such as beans, roasted veges etc. If it has any liquid or sauce dry it by heating on a pan before you fry with onions.  

  2. Use gluten free dough for making gluten free patties. 

  3. You can also use puff pastry dough for a flaky texture patty.

Ingredients

Shortcrust Pastry Dough – 1 roll
FOR THE FILLING
Leftover chicken or any meat – 1 cup, shredded or cut into small pieces
Boiled potatoes – 1 cup, mashed
Onions – 1, finely chopped
Oil- 2 tbsp
Salt to taste
SPICES USED
Roasted cumin powder or Curry powder – 2 tsp
Chili powder – 1 tsp

PREPARING THE FILLING

Take the leftover chicken or meat and shred into bite sized pieces or chop it into bite sized pieces.

In a pan heat 2 tbsp of oil. Once its hot add the chopped onions and saute for 5 mins until translucent.

Add the chicken pieces to the onions and saute for further 2 minutes.

Next add the potatoes, ground spices, salt, hot sauce if using and mix well together

Mix all the ingredients well together to make it into a smooth filling and set aside to cool.

MAKING THE ENVELOPE

Roll out the ready-made dough into oblong shapes to prepare it for the filling.

Take a large spoonful of the cooled filling and place it in the middle of the rolled out dough.

Fold one side of the dough over and above the filling to make it into a shape of a shell and seal the ends with a fork to make a pattern.

MAKE THE PATTIES

Pre heat over on 180 degree Celsius for 5 minutes.

Lightly brush each chicken patty with oil.

Bake the filled patties for 10-15 minutes on 180ºC until golden brown.

Remove and serve with ketchup.
