I discovered ‘baked fish in foil’ style of cooking while looking for different ways to cook fish other than curry, pan-fried or grilled!

What I loved about this method was that baking fish in foil locked in all the moisture and flavour that has a tendency to escape when grilled or pan-fried under direct heat.

A curry is good but sometimes you just want a quick fix instead of taking the time to make a sauce base.

Baking fish is a foil uses the least amount of oil as the juices from the fish tenderise and gives the fish a full-bodied flavour. It’s similar to poaching but different in a way that the added seasonings or marinade intensifies the flavour of the entire fish while still retaining moisture.

You can also add fast cooking vegetables such as asparagus, spinach, tender beans or broccoli to the foil and have a low carb healthy meal in one neat pack!

How to Cook Fish in a Foil
Cooking Fish in a foil does not require any special cooking skills so anyone who can boil water can make this recipe.

Few cooking tips;

You can choose to make a marinade, rub or simply season the fish with salt and pepper to bake fish in a foil. Depending on what you wish to add to the fish the steps below should be followed for a perfectly baked moist flavourful fish in a foil.

Step 1
Preheat the oven to 190° C or 375° F.

Step 2
Lay the piece of fish on top of an aluminium foil, cut large enough to completely enclose the fish portion.

Step 3
Choose your recipe i.e. marinate the fish, add seasoning or rub etc.

Step 4
Wrap the foil like a gift wrap around the fish, sealing it completely with the marinade in by crimping or pressing the edges together.

Step 5
Place the foil packet on a baking tray.

Step 6
Place the baking tray in the preheated oven.

Step 7
Cook the fish for about 15 to 20 minutes. (cooking time depends on the type and size of your fish)

Step 8
After about 20 minutes, carefully and slowly remove part of the foil to see the fish. Take care not burn yourself as the steam escapes from the foil.

Step 9
Check the doneness by either flaking through the thickest part of the fish with a fork or a knife or with the help of a meat thermometer (fish is considered well cooked when the temp reaches 65° C or 145°F). The fish should easily flake and not be opaque in the middle.

Step 10
If you think it requires more cooking, return the fish to the oven until its completely cooked through.

Step 11
Serve immediately either in the foil or by removing the foil and adding any extra juice on top of the fish.

Salmon fillet (skinless) - 350 gms
For the Marinate
Olive oil - 3 tbsp
Soya Sauce - 2 tbsp
Brown sugar - 1 tbsp
Chilli flakes - 1 tbsp
Coriander leaves - A large handful
Garlic - 3 pods, finely chopped
Salt to taste

Preheat oven
Prepare the Marinate
In a bowl add the olive oil,soya sauce, brown sugar, chilli flakes and salt. PS- Keep the quantity of salt less as soya sauce already contains salt.
Whisk it well together.
Next add finely chopped coriander leaves and garlic and mix well.
Putting Fish In a Foil.
Place the salmon in a large foil.
Add the marinade on the fish coating it well. You can also rub it into the flesh.
Fold the foil from all sides so that the fish is well packed without any room for steam to escape crimping the sides well.
Place the fish on a baking tray and put the baking tray in the oven.
Bake for about 20 minutes.
Take it out of the oven and check if the fish is cooked through.
If cooked serve immediately with your favourite vegetables or mash as a side!
